Heritage bakehouse craft

Stone, water, and golden semolina

Every loaf honors centuries of Moroccan grain stewardship. We knead coarse durum flour by hand at dawn, respecting slow fermentation across three daily wood-fired bakes.

The neighborhood hearth

Living Ferran heritage

In every historic medina quarter, the communal ferran stood as the social heartbeat. Families marked their kneaded dough with unique family stamps before sending trays to the shared neighborhood wood oven.

Yawmo preserves this shared rhythm in modern Rabat. We source heirloom durum wheat directly from farmer cooperatives across the fertile Saïss plains, milling small volumes weekly to keep every nutrient intact.

Center of table

Bread is the sole utensil, vessel, and blessing of our meal.

A Moroccan meal begins with breaking warm crust with your fingers. Without honest bread, tagines and morning olive oils remain unfinished.

From the baker

True khobz answers only to ambient humidity and cedar ember warmth. You cannot rush twelve hours of wild levain with industrial haste.
